Description

This is a Greek style spread or dip made from eggplant, garlic, and olive oil. If you add smoked peppers and tahini - it becomes babaganoush - try both variations, they are equally tasty but completely different. The recipe with two eggplants just gives you a small bowl of the spread to use right away. You can easily make more to keep in the refrigerator. However, we recommend that you do not keep them for longer than 3 days.
Try it as a spread on sourdough bread or as a dip with flatbread. Or, pimp your sandwich with a layer of eggplant spread and top it with grilled vegetables and tomatoes.

Vegan Feta Spread

A cheesy spread, yet totally plant-based.

Description

If you've ever got a deep grave for a cheesy spread but don't like the store-bought vegan cream cheese options, this vegan feta spread is the solution. The actual production takes just a few minutes. It only takes a few hours in the refrigerator, so it's best to prep it a day in advance. The secret of the "real feta" taste is the white miso paste - of course in combination with the other ingredients. So don't miss out!
You can eat it straight from the blender. But it won't be like feta, anyway it will be already a very tasty spread. But the feta taste and the feta texture it gets from the baking phase (and subsequent cooling). The longer you bake it, the more crumbly it will be. As a spread I would bake it approx. 20 minutes. It could take 35 minutes to sprinkle it over a pizza. Try what you like best.
You can be creative with this spread (after baking). Try it with fresh garlic, black olives, mix it with ajvar, fresh basil ...

Description

Vegan Mediterranean Grilled Eggplant Piadina with Garlic Sauce is a perfect fresh and healthy sandwich for lunch and a must for all garlic lovers. Piadina is the Italian version of flatbread that is baked with olive oil. It is very popular as a sandwich in Italy. You can fill it with anything you want. The recipe is for 2-3 flatbreads, depending on how much filling you want to put in them.
