It just calls out for a wonderful Sunday picnic brunch on the beach on the English coast, doesn't it? Cornish pasty is usually made with lard, so the dough is not vegan even if the filling could be. But it's easy to make a short crust pastry vegan. Just make sure you are using strong flour (like bread flour or whole wheat flour). The simple white is not elastic enough.
A light lunch, a picnic, a packed lunch, a brunch - Cornish pasty is very versatile.

Description

A great alternative to sandwiches as a packed lunch. Let's call it the portable shepherd's pie...! Baked cakes made from mashed potatoes with a spicy filling of mushrooms, onions and tofu. Filling, full of proteins , easy to store, freeze and prepare in advance. Ideal to take away for a picnic or for the office and school. Very easy to prepare in advance and freeze in freezer bags. Just reheat in the oven. If you want to keep them, make sure to keep than cool immediately after baking, as there are mushrooms in the filling. Mushrooms can be warmed up as long as they are not left unrefrigerated for too long.
They stay in the refrigerator for up to 3 days, in the freezer for a maximum of 2 months. They taste cold or hot.

Lovely combination of green asparagus and red onions.

Description

Nice combination of green asparagus and red onions. With a filling that is very similar to a dairy quiche - thanks to Kala Namak (black salt), even with egg taste. A great spring or early summer dish for lunch or dinner. Try using silken tofu instead of regular tofu, combined with kala namak, white miso paste, and nutritional yeast. They come as close as possible to an egg and milk filling. The tapioca starch and chickpea flour help hold everything together, as does the egg white.
The combination of green asparagus and red onions is not only very pretty. It's also a great flavor addition. You can either make your own short crust (see recipe) or buy a ready-made crust from the supermarket.

I love heirloom tomatoes. Not just the taste - but also the colours. This cup pie brings out the best of the little garden jewels. With a juicy tofu and onion filling, they are the perfect picnic lunch. A very nice vegan alternative to any quiche.
I was lazy and bought a ready-made short crust, but of course you can make your own.
The recipe is enough for 6-7 muffin tins.
