Traditional English dessert - vegan version.
The traditional English dessert is usually anything but vegan. But just a few changes and you'll be amazed how easy it is to make this divine pudding all vegan.
Summer is of course the best time for a typical Eton Mess, when all the fresh berries are harvested.
The recipe contains some alcohol. If you don't consume alcohol or cook for kids - just skip this, it's not that important (just adds a bit of taste).
Choc Cherry Cake
A fudgy, creamy chocolate cake filled with amaretto cherries and marzipan.

Easy to prepare and very quick (apart from soaking the cherries, which can be done in advance).
If you don't want to use alcohol to soak the tart cherries, try cherry juice or just water.

OK - I'm not pretending this is diet food. But it's far healthier than any dairy dessert.
Easy to prepare in cups to spoon - or in a large bowl for your next party. It stays in the refrigerator for at least 3 days.
You get the creamy praline filling with coconut cream. You can usually find canned coconut cream on the Asian shelves of your supermarket. The cream is divided into a white and sticky part and a watery part. For this recipe we only need the white part. The easiest way is to open the can upside down. You can pour the watery part and add the white pieces to your bowl.

Sweet, but still light and summery. These chocolates are super easy to prepare and can be stored in the refrigerator for a few days.
Great little treats for a snack, to offer your guests with a cup of tea or as a present for the host of your next party.
Many variations are possible. You can dip the pralines in melted vegan chocolate and cover with a little coconut, for example. And if you're a marzipan lover like me, just reduce the amount of coconut and increase the amount of marzipan in the recipe. It then tastes more like a marzipan potato (the German sweet for Christmas) with a hint of coconut. I love this variant!

The vegan pudding is made from silky tofu. Please do not use the firm tofu, it has a completely different taste and will never get that real custard feeling.
If you don't like peaches, you can be creative and replace them with other fruits that you like. Apricots, berries, oranges, mandarins - all go perfectly with this vegan pudding. If you're feeling lazy or too busy - there's no shame in buying a pre-made short crust, most of the options in the supermarkets are vegan.

The top with the woven mesh is very nice. But you can also create a simpler top by covering the entire cake and cutting a cross in the middle. As you wish.
Using the small cup pies is a perfect way to take them with you to picnics etc. They stay in shape in a box.
